Spumante Metodo Classico 2019 from Azienda Agricola Alessandro Fedrizzi is a wine born in the hills of Bologna’s Zola Predosa, in the heart of Emilia-Romagna, where Grechetto Gentile finds an ideal environment to express freshness, aromatic precision and a fine bubble of great continuity. This is the first Classical Method winemaking trial of Pignoletto developed within the Colli Bolognesi Consortium, the result of a collaboration between wineries and a shared oenological consultancy.
A project that enhances the territory and its most representative grape, interpreted through a production method that requires time, expertise and care.
Grapes, terroir and winemaking
Made from 100% Grechetto Gentile, the sparkling wine comes from vineyards trained by spurred cordon on marly, silty clay soils capable of imparting minerality and structure. The harvest, conducted from early August, allows the preservation of acidity and aromatic tension, which are essential for a quality sparkling wine base.
Vinification involves hyperoxidation and soft pressing, with fermentation in stainless steel thanks to the inoculation of selected yeasts. The second fermentation takes place with the addition of concentrated must, and the wine remains in contact with the yeasts for at least 30 months, developing complexity and finesse.
Prolonged aging on the yeasts, along with the choice of natural agglomerated cork corking, contributes to the elegant, clean style that characterizes the cuvée.
Sensory Profile
Color and perlage – The 2019 Metodo Classico shows a pale greenish yellow, bright and brilliant. The bubbles are persistent and elegant, indicative of a long second fermentation and careful yeast work.
Nose – Notes of fresh fruit and yeast aromas emerge at first impact: bread crust, delicate hints of pastry and an almondy hint on the finish. A crisp, fresh and composed bouquet, true to the character of the grape variety.
Palate – Fresh in the mouth, supported byexcellent acidity and a pleasant savoriness that lengthens the sip. The finish is clean and persistent, with a balance that invites a second glass. The Extra Brut type (very low sugar) further enhances the mineral and vibrant side of Pignoletto.
